The key is to find a sandwich that has otherwise involved flavors to ensure the tofu doesn't taste bland. In a reuben, between the sharp swiss, salty kraut, spicy mustard, and sweet 1000 Island dressing, the tofu replacing corned beef adds texture and a bit of flavor while acting as the perfect canvas for all the other elements of the sandwich.
