As I've said a million times, JJ and I love all things Buffalo Chicken. For the superbowl, he requested buffalo chicken tenders, but I wanted to try something new. I figured I could just mix some wing sauce in with ground chicken and make meatballs, since that's one of my favorite foods. These came together really easily, and tasted great! They had great buffalo flavor alone, but were even better when dipped in ranch plus more wing sauce. I'm sure these will make many more appearances at future parties!
Buffalo Chicken Meatballs
1 lb. ground chicken breast
1 egg white
1/4 cup buffalo wing sauce
1/2 yellow onion, minced
Salt and pepper
1/2 cup bread crumbs
Preheat oven to 400 degrees.
Mix together all ingredients in a bowl, tossing gently with fingers to incorporate.
Form into 12 meatballs, about the size of a golf ball.
Bake on a lined baking sheet for 15-18 minutes, until cooked through.
Serve with ranch, wing sauce, celery and carrots.
Note: I would have added 1/2 cup blue cheese crumbles to the meat mixture, or stuffed the balls with blue cheese chunks, but our guests do not like blue cheese. I will try this in the future!

I LOVE buffalo chicken too! Actually, am quite obsessed =) I've made them in the meatball version recently, they are a great healthy option.
