This week is going to be so crazy for me and JJ. In addition to completely changing our operating system at work, going to trainings all day then doing my daily work, JJ's got finals... and our parents are coming out this weekend! I'm hopefully going to get some good dinners out this week, but they're going to be quick and easy!
I had the best of intentions to make pico de gallo, guacamole, and really make these tacos special, but after my run this afternoon, I decided to lay lounge in the sun in a lawn chair for 30 minutes rather than dice tomatoes and mince cilantro... good thing I made the marinade and put the chicken in last night! All I had to do was prep the veggies, sautee some peppers and onions, and grill the chicken.
I put all of my stuff in a salad, and JJ put his fixings in some tortillas and had tacos.
This chicken was DELICIOUS! It tastes so fresh (because of the fresh juices) and it's so tender (from the acidity working as a tenderizer) and flavorful. I don't think I've ever had an Ina recipe I didn't like!

1/2 cup gold tequila
1 cup freshly squeezed lime juice (5 to 6 limes)
1/2 cup freshly squeezed orange juice (2 oranges)
1 tablespoon chili powder
1 tablespoon minced fresh jalapeno pepper (1 pepper seeded)
1 tablespoon minced fresh garlic (3 cloves)
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 whole (6 split) boneless chicken breasts, skin on
Combine the tequila, lime juice, orange juice, chili powder, jalapeno pepper, garlic, salt, and pepper in a large bowl.
Add the chicken breasts. Refrigerate overnight.
Heat a grill with coals and brush the rack with oil to prevent the chicken from sticking. (I used a grill pan)
Remove the chicken breasts from the marinade, sprinkle well with salt and pepper, and grill them skin-side down for about 5 minutes, until nicely browned.
Turn the chicken and cook for another 10 minutes, until just cooked through.
Remove from the grill to a plate.
Cover tightly and allow to rest for 5 minutes.

That just sounds so tasty with the lime and cilantro....great dish.
I love the fresh flavors of Mexican food! This is definitely on my list to try. Good luck with all of your training sessions and JJ's exams, etc. There's nothing like some good food to fuel you guys.
