Penne with Broccolini and Crispy Prosciutto

I am featuring Broccoli as the daily SuperFood! For tonight's dinner, I decided to use broccolini rather than broccoli. I love making pasta with lowfat ricotta because it's light and creamy. I added some lemon zest for a flavor punch, and topped it with crispy prosciutto for a salty bite. It was the perfect quick and easy dinner.


Penne with Broccolini and Crispy Prosciutto

1/2 lb. whole wheat penne
2 bunches of Broccolini
1 c. part skim ricotta
1 lemon, zested
1/4 c. chicken stock
Salt and pepper
2 tbsp. parmesan cheese
1/4 lb. prosciutto

Heat broiler to high.
Bring two pots of water to a boil, salt heavily.
Drop pasta in one, cook for 10 minutes, or until al dente.
Drop broccolini in the other, blanch for 2 minutes. Drain.
In the bottom of a large bowl, wisk together ricotta, lemon zest, stock, salt and pepper.
Add broccolini and drained pasta.
Toss pasta and broccolini in the sauce, top with parmesan cheese.

Broccolini is sooo yummy. I bet this would also be great with broccoli rabe. I will have to try it.

lovely! I love the light "sauce" that the ricotta makes. I like creamy pastas, but they always make me feel sick half-way, so this should be perfect!

I think you forgot to mention crisping up the proscuitto. :-) You said to heat the broiler but then never brought up the proscuitto. Just a heads up. And btw, this dish sounds really yummy!
