Sausage and Peppers are one of JJ's favorite combinations, so I try to make it often. I've made it in pizza, calzone, pasta, and subs. When I was in Cincinnati over the weekend, my mom and I went to Trader Joe's, and I found some awesome products I've never gotten there before. One of those was the Italian Chicken Sausage. I have tried all of the other varieties (apple-maple is still my favorite), they're so good, and low fat/cal! I also found this eggplant and red pepper spread, as well as Garlic Basil pasta. I love making my own pasta, but buying it is so much easier! I also love how TJ's sells 3 packs of goat cheese that are a bit smaller. Whenever I buy a goat cheese log, it serves 4, so we end up eating more than we should! I love to buy the 3 pack because it's the same price as a 6 oz. log, but you get 3 4oz. logs!
Rather than use my basic marinara and ricotta blend for this sausage and peppers pasta, I subbed the tapenade style spread for the marinara, and the goat cheese for ricotta.
I used their stoplight peppers in the frozen food aisle, and this meal came together so quickly and it was delicious!
Goat Cheese and Tapenade Sausage and Peppers Pasta
1 5oz. pack Italian Chicken Sausage
1 8 oz. bag of Garlic Basil Fettuccini
1 bag of frozen bell pepper strips
1/2 c. Roasted Red Pepper and Eggplant Spread
1/4 c. crumbled Goat Cheese
Pinch of crushed red pepper flakes
Salt and Pepper
Bring a pot of water to a boil, salt and add pasta.
Cook according to package.
Heat a large skillet over medium heat.
Add peppers, heat through.
Slice sausage, add to the peppers.
Add tapenade, salt, pepper and red pepper flakes to peppers.
Cover, heat through, about 5 minutes.
Add pasta, toss.
Plate and top with crumbled goat cheese.
Note - I love TJ's products because they are usually natural, organic, no preservatives, etc., but also because of the cost, here's a little breakdown...

I love TJ's prices as well and there are some things that I will only buy there (which results in me making two shopping trips a week but c'est la vie), such as their bread, yogurt, and hummus. I have seen the eggplant/red pepper spread before but haven't tried it...glad to know its good. And their chicken sausages are the best!

And how funny...I went to the TJ's in Columbus for the 1st time over the weekend with my sister and I loved it! Where I live, there isn't one around :(
