Stuffed Turkey Pesto Meatballs


Since we'll be travelling for the next few weeks, I've been trying to clean out the fridge this week. I had some gound turkey breast, pesto, penne, and bruschetta topping (tomatoes, basil, red onion). I decided to makea simple penne mixed with the bruschetta topping with turkey pesto meatballs. I had some brie left, so I stuffed the meatballs with the brie.... which is very good at oozing out of things! These meatballs were fantastic, moist and very flavorful.


Stuffed Turkey Pesto Meatballs

1/2 lb. ground turkey breast
1/2 c. breadcrumbs
1 egg
salt and pepper
1/4 c. prepared pesto
1/4" cubes of brie
1/2 lb. penne, cooked
1 c. bruschetta topping

Preheat oven to 375 degrees.
Gently toss in a bowl turkey, breadcrumbs, egg, salt, pepper and pesto. Divide into eights.
Make a ball out of each, poke your finger in, stuff the cheese cubes in, and close off.
Place on a nonstick cookie sheet, bake for 18 minutes.
Serve with pasta tossed with bruschetta mixture.
