Everything Frittata

Since we'll be going out of town this weekend, tonights dinner was menat to clean out the fridge. There are a few ways I'll do this, one is throw everything in with some pasta, another is make a big salad, and last is make a frittata or quiche. Lately I've been partial to frittatas because they're much healthier - no crust! They're so basic and can be made a million ways, this is another method of cooking, not recipe, as I've learned from Rachael Ray!


Ham, Gruyere, Spinach and Mushroom Frittata


4 c. spinach, cooked down and drained
1 c. sliced shiitake mushrooms, sauteed
4 slices deli ham, sliced
1/2 c. shredded Gruyere cheese
2 eggs
2 egg whites
2 tbsp. milk or cream
Salt and Pepper
1/4 tsp. cayenne
1/2 tsp. dried thyme


Prepare all veggies and prep ham and cheese.
Beat remaining ingredients in a small bowl, set aside.
Preheat broiler to high.
Heat a nonstick pan sprayed with nonstick spray over medium-high heat. Layer in veggies and meat and cheese, pour eggs over top. Cook for 4-5 minutes, until bottom is set. Place under broiler and broil for 3-4 minutes, watch it carefully!
Let it sit for 5 minutes, then slice and take out of pan. Be careful, the handle will be hot!

That looks great! I've always wanted to make a frittata and this just inspires me more. =)

mmm yum.... frittata with mushrooms :) I love mushrooms.
