Apple Chicken Salad


Today's race is in Michigan. I did a little research and found three of Michigan's notable products are apples, cherries, and mint. I decided to incorporate those three ingredients into dinner tonight. First, was a chicken salad. I found organic chicken at Kroger, which is new there. I usually put grapes into my chicken salad, but thought apples would be a nice substitute. I made the pita homemade after seeing a few people on the message boards rave about how easy it is. It was delicious, and it really was easy!


Apple Chicken Salad


1/2 lb. chicken breasts, poached and shredded
1/4 c. plain nonfat yogurt
1 tbsp. stone ground mustard
Salt and Pepper
1/2 granny smith apple, finely diced
1 rib celery, minced
1/2 tsp. thyme leaves
1 tsp. sugar


Mix all ingredients in a bowl, taste and season.
