1 package of ravioli
1 jar of Trader Joe’s pomodoro sauce
1 recipe of meatballs
1 sack of light Caesar salad
Roma tomatoes, sliced
Parmesan cheese
For dessert, my family or friends, always get me cannolis. I rarely have them on any other occasion, they’re a special birthday treat! My mom got cannolis for my family birthday dinner on Sunday, so I decided to make a version at home with my ice cream maker, a birthday gift from JJ. I decided to go for a vanilla frozen yogurt, with some ricotta in it. I also like chocolate chip cannolis with pistachio too. I decided that sugar cones would resemble the cannoli shell the best, so that’s my serving device. I highly recommend purchasing an ice cream maker, especially with summer right around the corner!
Cannoli Ice Cream Cones
½ c. skim milk
½ c. sugar
1 c. low fat ricotta
3 c. fat free vanilla yogurt
1 tsp. pure vanilla extract
½ c. mini chocolate chips (semi sweet)
½ c. chopped pistachios (we could only find walnuts)
Sugar cones
Whisk milk and sugar in a bowl until sugar is mostly dissolved. Mix in ricotta, yogurt, and vanilla. Add to ice cream maker, and churn for 25 minutes. Add in chocolate chips and pistachios, mix to incorporate. Transfer to a Tupperware dish, freeze for 2-3 hours, then scoop into cones.
