Thai Peanut Barbeque Chicken Pizza
1 pizza crust or dough ball
½ cup hoisin sauce
1 red onion, sliced
1 bell pepper, sliced
2 cups part skim mozzarella, shredded
½ tsp. crushed red pepper flakes
¼ cup scallions, sliced
1 cup bean sprouts
2 thin chicken breasts
¼ cup peanut butter
¼ cup soy sauce
Salt and pepper
Preheat oven to 375. Roll out dough, top with hoisin sauce, bell peppers, onions, cheese, and crushed red pepper flakes. Bake for the time directed.
Preheat grill pan to medium high.Mix soy sauce, peanut butter, salt and pepper in a large bowl, toss in chicken to coat. Grill for 5 minutes per side.
Take off the heat and rest for 5 minutes.
Slice and arrange on pizza (after it’s finished baking).
Top with scallions, bean sprouts, and cilantro.
