Armenia - #4


I wanted to make an Armenian dessert, but I didn't want another baked good as I've made so many this week. I saw this snack/dessert made from fruit and yogurt and thought it would be delicious. I derived from the recipe in the cookbook because it was much more work, but it tasted great!

Sun-Dried Apricot Halves with Sweet Cheese and Pistachio Dust

1/2 cup shelled pistachio nuts
36 sun-dried apricots in almond scented syrup
1 1/2 cups sweetened yogurt cheese
1 tbsp. confectioner's sugar

I used:
Apricots
1 cup plain yogurt
3 tbsp. honey
1/2 tsp. almond extract
sliced almonds

Mix half of honey, almonds, and all of the yogurt. Dollop on each apricot, top with an almond sliver, and drizzle with honey. Serve cold.

Looks yummy, and the blogsite is great (although I can see that all of the German Fans are hoping for another German Menu...don't be fooled...Fiji is better!). Photo looks great (although we always love you the way you are, however and whenever you are)! One question: with all the great recipes and pictures of tasty food, JJ has got to be cleaning his plate and eating fabulously....are you running him up and down the track? I thought he was training for a run!

I love ANYTHING with fruit yogurt and honey and apricots are one of my favorties as well. These look SOOOO good!!!!!!! Gash darn it Ashlee. Stop making all this wonderful food! lol.
